AB - Buckwheat is one of the functional pseudocereals rich in
antioxidants, nutrients, bioactive compounds, and phytochemicals. Colour
represents one of the most important sensory parameters in the quality assessment
of the meat products. The aim of this study was to determine the possible effect of
9-month artificial aging storage at 40 ± 2 °C on the change in instrumental colour
of buckwheat products used in the meat industry. In the CIE L*a*b* system, L*,
a*, and b* coordinates are used to specify the data of instrumental colour
properties. The results were statistically processed by two-way ANOVA (P<0.001)
and Tukey’s Honestly Significant Difference post-hoc tests (P<0.05). Storage and
product type (and their interaction) factors significantly influenced instrumental
colour. During storage, significant differences were observed between the time
points (0, 3, 6, and 9 months) in flour, with trends of decreasing lightness (L*) and
increasing red (a*) and yellow (b*) colour intensity values. Regarding product
type, significantly higher L* values were observed in flour, while a* values were
higher in grains. Except for the 3rd month, b* values did not show significant
differences. The insights gained in this study may indicate the further application
of stored buckwheat flour and grains in obtaining technologically justified and
colour-sensory acceptable meat end-products for consumers.
AB - Heljda je jedna od funkcionalnih pseudožitarica bogata antioksidansima, hranljivim
materijama, bioaktivnim jedinjenjima i fitohemikalijama. Boja predstavlja jedan od
najvažnijih senzornih parametara u proceni kvaliteta proizvoda od mesa. Cilj ovog
istraživanja je bio da se utvrdi mogući uticaj 9-mesečnog veštačkog starenja u
skladištu na 40 ± 2 °C na promenu instrumentalne boje proizvoda od heljde koji se
koriste u mesnoj industriji. CIE L*a*b* sistem sa L*, a* i b* koordinatama je bio
korišćen za specifikaciju podataka o svojstvima instrumentalne boje. Rezultati su
bili statistički obrađeni testovima dvofaktorska ANOVA (P<0.001) i Tukey-jev
Honestly Significant Difference post-hoc (P<0.05). Faktori skladištenje i tip
crvene (a*) i žute (b*) boje.

AB - This study provides an overview of food prices in the Republic of Serbia from 2016 to 2023 amidst the challenges faced by the meat processing industry. Household spending trends reveal a notable shift, marking an increase since 2016. The study explores meat products' affordability and nutrient density, challenging conventional assumptions. Mortadella emerges as the most nutrient-dense despite its lower calorie content due to high protein content, while pâté commands a higher market price despite its lower nutrient quality.

AB - Wastewater from the meat industry contains high concentrations of organic matter. The composition of these wastewaters depends on the type of meat being processed, the frequency of slaughtering, the size of the plant, and the disinfectants used to maintain hygiene. In order to achieve satisfactory wastewater quality and reduce environmental pollution, the agroindustry applies and develops different technologies for wastewater treatment. This review paper provides a literature overview of some of the most commonly used methods in wastewater treatment within the meat industry.

AB - Growing grasses in a mixture with legumes leads to more profitable
production, better quality of forages, an increase in soil biogenicity and fixation of
a significant amount of nitrogen. The experiment was established as a two factorial
trial by the method of randomized complete block design in three replications. Italian
ryegrass – monocrop (IR), red clover – monocrop (RC) and their mixtures – IR:RC
(15:5 kg ha-1), IR:RC (15:10 kg ha-1), IR:RC (20:5 kg ha-1) and IR:RC (20:10 kg
ha-1) were planted in November 2016, with the first cutting in the spring 2017 – on
May the 9th, and the second cutting in the early summer – on June the 22nd. The
aim of this study was to investigate the concentrations of phenolic compounds such
as condensed tannins in Italian ryegrass, red clover and their mixtures, as well as
their concentrations impact on protein degradability in the rumen depends on the
seeding rate in the mixtures and harvested in the spring and early summer. Results
obtained in this study showed that higher concentrations of non-protein nitrogen
and soluble protein in forages harvested in the spring influenced higher rapidly
degradable protein concentration in investigated mixtures. The highest rumen
undegradable protein was determined in Italian ryegrass monocrop harvested in
early summer, and we assume that high condensed tannins concentration
influenced the slower protein degradability. Our recommendation for plant
breeders is that cultivars with higher content of condensed tannins should be
created and introduced in animal nutrition.

AB - Managing N, P and K inputs in semi-natural meadow production systems is important for achieving maximum yields in livestock farming. The objective of the present study was to estimate the effect of different NPK levels (N0P0K0, N50P50K50, N100P50K50, N100P100K100, N150P100K100 and N200P150K150 kg ha-1 yr-1) on the yield, quality and nitrogen nutrition index (NNI) in a grassland community of Agrostietum capillaris (semi-natural meadow) in western Serbia. The study was conducted during the seasons of 2005-2008. The values of the investigated parameters, except for the unit N uptake, were the highest in 2004/2005 due to favorable climate conditions. The levels of nitrogen significantly increased all of the studied parameters compared to the control treatment, except for unit N uptake. Mineral fertilizers at N200P150K150 provided the highest green forage yield (25.12 t ha-1), dry matter yield (8.12 t ha-1), crude protein yield (876.3 kg ha-1), nitrogen uptake (140.2 kg ha-1) and nitrogen nutrition index (70.2%), and the lowest unit N uptake (0.0022 kg N kg DMY-1). The use of mineral fertilizers increased green forage yield, dry matter yield and crude protein yield, increasing fertilizer from lowest to highest rate increased fresh and dry matter yield, as well as protein yield. Based on the results of the study, monitoring of nutrition indices would be necessary in order to increase productivity and economic benefits.
